Production process: Cutting and destemming of the cactus (including skin and spines) until a gelatinous maceration of the material is obtained. Fermentation: 8–10 days with oenological yeasts. Vacuum distillation using a handcrafted wood-fired still. The green and herbaceous notes, balanced by the smoothness of the alcohol, make this distillate ideal to be enjoyed pure or blended.
