Santa Spina Fumigata. 100% Distilled prickly pear cactus smoked. Material: Opuntia (prickly pear cactus). Production process: Pre-fermentation smoking with beechwood for approximately 10 hours (whole pads with skin and spines). Destemming of the smoked pad until a homogeneous maceration is obtained. Fermentation: 24–28 days (a slower process due to the smoking, which acts as a preservative). Vacuum distillation using a handcrafted wood-fired still. The light smokiness softens the green and herbaceous notes, resulting in a distillate rich in perfectly balanced flavours and aromas. Ideal to enjoy on its own, excellent for cocktails. Alk.: 44%.
